  • 1 tablespoon of fresh lemon juice

  • 1 teaspoon of lemon zest

  • ¼ teaspoon of kosher salt

  • Freshly ground black pepper, to taste

  • 4 split-top brioche buns from 9 Bean Rows Bakery, sides trimmed

  • 4 tablespoons of unsalted butter, divided

Instructions:
